Summoning the Senses With Our Summer Cocktails

Welcoming long London days, and warm summer nights, our cocktail list takes shape as a handbook filled with fruity refreshments. Discover our summer cocktails which make perfect aperitifs, with divine drinks for friendly meetings and seasonal gatherings at the club.

Elevating the already primed seasonal ingredients, the bar team has handpicked (literally) components that are suited to one another, playing with flavour profiles and characteristics that work to transport you to the farms, fields and forests, to reconnect with the roots and stems of the earth and the rays of the sun. 

FIGRONI

Fig leaves are a recurring motif in artworks dating back to the year 1530, as a method of combating the increasing depiction of nudity in Ancient Greek and Roman art. To honour its iconic association in the creation of artworks that have since embedded itself into our culture, our bar team use fig leaves in the Figroni, handpicking them during the prime summer season where the leaves emit a sharp green, grassy scent. 

Coupled with tartness from the apricot and infused with mellow, nutty tones of green coconut, this spin on a white negroni is a nod to the club’s concept and a testament to the way cocktails can be an interpretive form of art in itself.

GREEN INK

This reimagined Gin & Tonic is one of many clever ways our award winning bar team are reducing waste while maximising flavour to inspire summery sundowns.

Giving new life to otherwise discarded vibrant green pea and bean pods, our mixologists infuse the cordial with vinegar to add tang. Mixing Battersea gin from Doghouse Distillery, whose grains are sourced from the North of England – an uncommon, ecocentric practice ensuring reduced carbon footprint – Green Ink is a light, refreshing, icy cocktail that reminds us of quality time well spent in a sunny park with loved ones, sitting in a flourishing back garden, or sunbathing by the pool without a care in the world.

Also available as a non-alcoholic option, our team substitute the gin for Everleaf Marine, an aperitif made from a crisp blend of 16 sustainably sourced botanicals.

Strawberry Swing

What is summertime without juicy, sweet strawberries?

In what tastes like a childhood memory – think pink frosted donuts, sponge cake, or strawberries and cream – this fun and vibrant cocktail infuses Kentish strawberries with toasted organic oats, evaporated vodka, and cognac – giving it a sweet, vanilla dough taste.

The same oats are ground into a fine powder, accentuating the sweetness from the bright strawberry drink, while serving as a visual reminder of powdered sugar.

You could also compare the cocktail to a cone of strawberry gelato, transporting you to a gelateria in a small Italian town bustling with colour and culture.
